One thing you can say is that France has always been a major cultural player, including cuisine. And today, things everywhere move toward a lighter tone with fresher, local ingredients. And easy communications and transportation has made evolution of cooking a worldwide phenomenon, no longer driven by one place. I think what people often are thinking of when they think “French cooking” are the icons of the wonderful regional cuisines. And in Paris, all the ingredients and techniques of the various traditional regional cuisines come into play, so there’s no answer to your first question. I won’t pretend to send you to one place of another, but no doubt someone on the ground there can.
